Comparing Sushi and Sashimi

One distinction that tends to be frequently misunderstood is the difference between sushi and sashimi, which are both traditional Japanese food staples that have similar qualities but some key differences to note. Here’s a quick comparison:


Sashimi consists only of fresh, raw fish, which is expertly sliced into small, bite-sized pieces to order. It is served without rice, so you can note the most subtle, delicate nuances in the flavor of each piece of fish. Popular sashimi choices include salmon, tuna, and toro—or fatty tuna belly. Sushi may have a variety of ingredients, which can include raw fish, but doesn’t always. Sushi does always contain sticky rice seasoned with vinegar, and it often includes traditional ingredients like seaweed, cucumber, and fish roe as well as some American additions like cream cheese and imitation crab.


Sashimi is presented with a clean, simple plating that showcases the fish. It is to be eaten with chopsticks, so as not to impart any flavors from the hands while eating. Sushi, however, can be considered finger food. It will either be served in a roll or with a large bed of rice under a piece of fish, so it can be eaten without touching any raw fish directly. Sushi is also plated up with a more elaborate presentation, especially if you order rolls, which may be covered in sauces, tempura battered and deep fried, or have other garnishes that add some visual intrigue to the plate.
