It’s summer and that means spending time in the backyard with the grill going ! If you’re planning on hosting any backyard parties this summer, then you’ll want to serve the perfect meal. Steak is always a great choice, but you’ll need to know about temperature basics to make sure everyone gets a tasty meal that they enjoy:

Steak Temperatures

How do you like your steak ? Whether you prefer extra rare or well done, it’s important to have an understanding of the ideal temperature for each type. To check temperatures, you’ll need to insert a food thermometer into the meat. Stick the thermometer in the thickest part of the meat for the most accurate reading. If you prefer rare, the internal temperature should be between 120°F and 125°F. For medium rare, look for a number between 130°F and 135°F. Medium steaks should be between 140°F and 145°F. If you’d like a medium well steak, it should be between 150°F and 155°F. Finally, if you like your steak well done, it should be between 160°F and 175°F.

Steak Cooking Times

You can also estimate cooking times to help you determine when your steaks are at their desired level. Cooking times differ both by how done you want your steak and what type of steak you’re cooking. For filet mignon and center-cut ribeye, you’ll want to cook them between 3 and 4 minutes for rare, 3.5 and 4.5 minutes for medium rare, and 4 and 5 minutes for medium. If you have sirloin strip steaks, ribeye steaks, or porterhouse steaks, you’ll want to cook them between 4 and 6 minutes for rare, 5 and 7 minutes for medium rare, and 6 and 8 minutes for medium. It’s always best to double-check the temperature with your food thermometer.
